Ingredients

  • 1 bag or large can sauerkraut
  • 1 apple, peeled, cored, and chopped
  • 1 medium onion, chopped and sautéed
  • Salt and pepper, to taste
  • 6 dried juniper berries
  • 4 bay leaves, or 3 to 5 depending on size

Instructions

  1. Drain the sauerkraut well, reserving the juice.
  2. Add a little water to the reserved juice and set it aside. If the juice tastes too strong, add more water to dilute it.
  3. Sauté the onion until softened.
  4. To brown the sauerkraut, add it to a pan and cook over high heat until a brown glaze forms on the bottom of the pan. Add a small amount of the reserved liquid and stir to deglaze the pan. Repeat until the sauerkraut is lightly browned, being careful not to burn it.
  5. When the sauerkraut is browned to your liking, reduce the heat to low. Add the apple, onion, salt, pepper, juniper berries, bay leaves, and the rest of the reserved liquid. Add any precooked meat or sausage at this point as well.
  6. Simmer as long as desired.

Notes

  • Juniper berries can taste unpleasant if bitten whole. Pick them out along with the bay leaves before serving, or remove them as you go.
