Ingredients

Flavor Base

  • 1 tbsp beef tallow, bacon grease, or butter (14 g)
  • 1 large onion, finely chopped
  • 6 to 8 cloves garlic, minced

Sauce Ingredients

  • 2 cans (32 oz total) tomato sauce
  • 1/4 cup tomato paste
  • 1 cup water (240 g)
  • 1/2 cup Worcestershire sauce
  • 1 tbsp beef base (Better Than Bouillon or similar)
  • 1 tsp soy sauce or Maggi (optional but recommended)
  • 1/2 cup malt vinegar
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar (53 g)
  • 3 tbsp unsulphured molasses
  • 2 tbsp fresh cracked black pepper
  • 1/4 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp mild chili powder
  • 1 bay leaf (remove before jarring)
  • Pinch ground chili (optional)
  • 1/4 tsp Tabasco or mild vinegar hot sauce (optional)
  • 2 tsp dry mustard
  • 2 tsp prepared mustard (Creole or fermented mustard works well)
  • 1 tsp salt (or mild Cajun seasoning without cayenne) (6 g)
  • 1 tsp dried thyme
  • 1/4 tsp liquid smoke

Finishing

  • 1 tbsp apple cider vinegar
  • 1 tsp fresh cracked black pepper

Instructions

  1. Smoky, tangy, pepper-forward Texas-style BBQ sauce. Mild heat, rich flavor, not overly sweet. Perfect for brisket, ribs, or pulled pork.
  2. Build the flavor base: Heat the butter, bacon grease, or tallow in a heavy saucepan over medium heat. Add the onion and cook 8–10 minutes until lightly golden. Add the garlic and cook 30 seconds until fragrant.
  3. Add remaining ingredients: Add everything else except the finishing vinegar and pepper. Stir well to dissolve the tomato paste and beef base.
  4. Simmer: Simmer uncovered over low heat for 45–60 minutes, stirring occasionally. The sauce should darken slightly, thicken, and lose its raw tomato taste. Add small amounts of water if it thickens too much.
  5. Final adjustment: During the last 5 minutes, remove and discard the bay leaf. Add 1 tbsp apple cider vinegar and 1 tsp fresh cracked black pepper. Taste and adjust salt or sweetness if needed.
  6. Rest: Let the sauce cool and refrigerate overnight if possible. The flavor improves significantly once the spices hydrate.

Fat Matters

For long-term pantry storage:

Fermented Mustard Note

If using fermented mustard (like the kind from your fermented mustard recipe), it adds extra depth and tang. Regular prepared mustard works fine too.

Water Bath Canning

If canning for long-term storage:Bring the sauce back to a full simmer.Ladle into sterilized jars, leaving ½ inch headspace.Process in a boiling water bath:15 minutes for half-pints20 minutes for pintsStart timing once the water returns to a full boil.Cool undisturbed for 12–24 hours.Check that all lids have sealed before storing.

Storage

Sealed jars: Up to 12 months in a cool, dark placeOpened jar: Refrigerate and use within 2–3 weeksRefrigerator (not canned): 2–3 weeks in sealed container

Texas Style

This sauce is pepper-forward with moderate sweetness — not as sweet as Kansas City style. The beef base and Worcestershire provide deep savory notes that complement smoked meats.

Overnight Rest

The flavor improves significantly after resting overnight. The spices hydrate fully and the flavors meld together. If possible, make this a day ahead.
